Alton Brown Speaks on Sustainable Seafood at Tennessee Aquarium
Food Network host, Alton Brown, lends name for second year to the Tennessee Aquarium's Serve & Protect program.
For the second year, Brown and the Aquarium presented a demo using seafood outside of the common salmon, tuna, and swordfish. This year he championed Arctic char, clams, summer flounder, and the ever terrorizing squid, which became the featured item of the demo.
Make wiser seafood choices
Before he demonstrated cooking of squid, Brown talked about how in the market consumers are often confused about sustainable seafood. Simplifying the issue, his three basic ideas are: buy American, eat smaller critters, and diversify what you eat.
First, buy seafood from the US because it is the safest and best regulated in the world. Waterways and aquaculture are less maintained in Asian markets allowing dangerous toxins in the fish. The carbon footprint of seafood shipped from the other part of the world is also a major factor. And bottom line, buying US fish helps US fishermen/women and the economy. He did note an exception with Arctic char, which comes from colder waterways in like in Canada and Scandinavia.
Secondly, we, as consumers of seafood, need to stop going for game fish that need years and years to develop and mature to reproduction age and think about smaller fish. These smaller fish live out their lifespan much quicker thereby reproducing in more plentiful ways than say a tuna. Along with this shorter lifespan, smaller fish are less likely to contain contaminants such as mercury since it doesn't have years to build up in their systems.
Finally, Brown advocates a diverse seafood portfolio, like most of the rest of the world. Throughout cuisines of other cultures, seafood choices run the gamut. All embrace the concept of using what is available locally. In the US, however, we tend to eat a few select varieties over and over. If we look to those other cultures, Brown contends, we can be better seafood consumers and maintain the world's aquatic life for generations.
Farm vs Wild
Brown also addressed the ever present question of farmed raised versus wild caught. The answer comes down to a case by case situation. Fish like Arctic char, rainbow trout and catfish are excellent for aquaculture because they do well in small confines and have a low feed conversion rate. Salmon, on the other hand, as predatory fish need large areas, massive amounts of food, and medications to live in a farmed environment.
The take away
The big lesson Brown wants people to take away from the demo and sustainable seafood project is to look past the American seafood rut and check out other seafood that is just as tasty but better use of our resources. Plus that whole eat the squid while they are little to prevent the giant squid attacks.
